Grape seeds are a complex matrix containing 40% fiber, 16% oil, 11% protein, and 7% phenols such as tannins.

The proanthocyanidins ( PAC or OPC ) of grape seeds are mainly composed of monomeric catechin, epicatechin, gallic acid and polymeric and oligomeric proanthocyanidins.

What are the biological properties of grape seeds?
