What is vitamin B1 (Thiamine)?
Vitamin B1 or thiamine is a water-soluble vitamin; its name comes from the functions of its molecule: a sulfur group (Thia) and an amine group.
What are the properties of Thiamine (vitamin B1)?
There are 3 phosphorylated derivatives of thiamine (TMP, TPP, TTP). TPP (thiamine pyrophosphate) and TTP (thiamine triphosphate) are particularly important for the body and are necessary for metabolism as coenzymes.
Thiamine is water-soluble and therefore dissolves in water. It is relatively stable in contact with air, but it is sensitive to heat and ultraviolet radiation. It degrades at around 100°C in an aqueous environment. Thiamine can therefore be degraded by cooking processes.
Thiamine is not synthesized by our bodies. Our gut microbiota can synthesize a small amount, but it is not sufficient to meet the body's needs. It must therefore be obtained through diet.
Thiamine was initially identified in the understanding and treatment of beriberi (heart failure associated with neurological disorders). Beriberi is a consequence of thiamine deficiency, so it is important to obtain it through diet. Thiamine deficiency can also result from intestinal malabsorption or be a consequence of alcoholism.
What foods are richest in thiamine?
Thiamin is present in a wide variety of animal and plant foods, but in small quantities. Meat and fish are a good source of thiamin.

- Dry yeast: 2 - 35
- Pork meat: 0.2 - 1.0
- Offal: 0.2
- Various meats and fish: 0.01 - 0.04
- Legumes: 0.1 - 0.34
- Dairy products, vegetables, fruits: 0.02 - 0.08
Is Vitamin B1 heat-resistant?

⚠️ Cooking at 100°C and above is likely to alter the thiamine content.
What are the recommended daily intakes of vitamin B1?
The recommended daily intake of thiamine is 1.3 to 1.5 mg.
What are the health claims of vitamin B1?
EFSA authorises the use of health claims for products containing vitamin B1.
They must provide a minimum of 0.16mg of vitamin B1 per 100g, 100ml or per serving.
Products meeting these criteria can claim to contribute to:
- At metabolism normal energy
- to the normal functioning of the nervous system
- with normal intellectual abilities
- to the normal functioning of the heart.
What are the contraindications and side effects of vitamin B1?
There are no contraindications or side effects associated with the consumption of vitamin B1.
Pregnant women should not consume more than 3mg of vitamin B1 per day.
